Executive Chef Philippe Corbet brings more that 10 years of culinary experience to the Roots kitchen. He grew up in a family of chefs and developed an expert knowledge of food at an early age. While living in his native country of France, he formally studied the art of cooking, earning a four-year chef's degree and graduating first in his class. From there, he worked in a variety of Michelin-starred restaurants — including the famed Georges Blanc in Vonnas Ain — where he honed his skills and developed an interest in world cuisines. At the age of 24, Philippe came to the East End of Long Island to begin cooking at one of the Hamptons' most enduring and successful restaurants, Stone Creek Inn. Philippe stayed at Stone Creek Inn for several years, but eventually decided to try his hand in the New York City restaurant scene. He accepted the position of executive chef at Bouley, one of New York's consistently top-rated restaurants, and one that holds two Michelin stars. After a successful stint at Bouley, Philippe was more passionate about food and cooking than ever. He wanted to create his own brand and focus his time and efforts on crafting the dishes he loved. As a result, he moved back to Suffolk County, Long Island, where he became the executive chef and managing partner O's Food & Wine Bar. at Oscar's of St. James
Chef James Orlandi trained at the Institute of Culinary Education in New York, New York. He completed his stage at Jean George's, self named Michelin Star restaurant. From there, Chef James served as sous chef under Phillippe Corbet at O's Food & Wine Bar located in St. James, Long Island. James' desire to challenge the conventional, his respect and passion for cuisine itself, helped forge a strong partnership between the two chefs.
Roots takes pride in working with local farms, wineries, butchers, and food vendors; which is the first step to sustainability. Often misinterpreted the act of sustainability is not the process of eliminating certain ingredients but focusing on using available ingredients more efficiently. Roots supports local production and distribution in an effort to maintain an equilibrium between man and an environment that can endure the test of time. Interconnectivity is an essential factor in our sourcing, and ultimately teaches people how to eat better.
